Ingredients for 4 people
- 400 g of Grandma Gina's rigatoni
- 500 g of shrimp
- 4 courgettes
- 100 ml of white wine
- 1 clove of garlic
- Salt and pepper
- Parsley (one tuft)
- EVO oil
PreparationBrown a clove of garlic in the oil in a large pan or wok.
Remove the garlic clove and add the courgettes cut into thin slices.
As soon as the courgettes are cooked, add the peeled shrimps.
In the meantime, cook the pasta in plenty of salted water, drain it al dente and toss it in the pan together with the sauce for a couple of minutes.
Serve the zucchini pasta and shrimp with a sprinkle of pepper and a sprig of parsley.
